InFermento is a natural sparkling wine produced in the "Ancestral Method" using a filed blend of indigenous grapes and left on the lees to contribute to its complexity. Unfiltered.

Varietal: field blend red grapes

Soil: calcareus clay and sandstone

Yield per hectare: 60/70 q

Harvest: by hand in small baskets, grapes selection

Winemaking: short skin-maceration, fermentation in temperature-controlled stainless steel tanks. Bottled in November with crown cup, fermentation continue in bottle, not filtered and no dosage is added

Ageingin bottle for 6-8 months

 

Food pairings 

Raw fish, fried fish, shellfish. Perfect as aperitif.
